Have I lost my mind sharing a smoothie recipe in the middle of record breaking low temperatures? Yes, probably so. "Luckily" I'm home sick with a cold, bundled in three layers with a 135 lb fur coat on my lap. Still, just writing this post is painful, so, rather than encouraging you to run to the kitchen, let's just pin this gingery wild blueberry coconut smoothie recipe for later.

Speaking of these freezing temperatures, is it not stemming from a polar vortex, the same plot as The Day After Tomorrow? As cold as it is, it's decidedly less dramatic than the movie, and I for one, am disappointed.  Why are wolves not stalking the streets of New York City? Where's the forty feet of snow?  And most importantly, where is Jake Gyllenhaal?

Anyhow, on to this wild blueberry coconut smoothie recipe. Made with wild blueberries, this smoothie packs even more blueberry flavor into the glass - we’ll get to why in just a minute. It’s extra-creamy from the coconut milk, which also makes it super satisfying as it’s a rich source of fats. Ginger adds a some warmth, and pairs perfectly with both blueberry and coconut.

Wild Blueberries vs. Regular Blueberries

If you’ve never had wild blueberries, you’re missing out! From the cold barrens of Maine, wild blueberries have to protect themselves from the weather, so they grow smaller and more concentrated with anthocyanins, which gives them more concentrated blueberry flavor.

Regular ‘ole blueberries are already packed with nutrition, but wild blueberries are even more so. Wild blueberries and/or the anthocyanins they contain have been studied for cognitive health, heart health, and may even lower the risk of diabetes. In particular, I think the research on cognitive health is really exciting. The MIND diet, an eating pattern designed to reduce the risk of dementia and prevent cognitive decline, heavily features blueberries.

Gingery Wild Blueberry Coconut Smoothie Adaptions

  • If you want to spice up this blueberry coconut smoothie even more, try adding a bit of cardamom or turmeric, although keep in mind the latter will turn the color a bit brownish.

  • Feel free to throw some greens in here. I like to make this smoothie with a handful of fresh spinach, which will blend up nicely without altering the taste too much.

  • For a more filling smoothie, I love to add a small handful of rolled oats, which gives the smoothie a bit more fiber and filling carbs without altering the taste too much.

  • If you don’t have coconut milk, I’ve made this by swapping regular dairy milk or almond milk, then throwing a few tablespoons of shredded coconut in the blender for coconut flavor.

  • While wild blueberries are my favorite fruit blend for the coconut ginger mix, I also love to make this with mango or peaches.

What to Serve With This Wild Blueberry Coconut Smoothie

While I love a smoothie in the morning, especially when it’s hot outside, you’ll probably need a little solid food to go along with it for a satisfying breakfast. I love to have this wild blueberry coconut smoothie with some peanut butter or almond butter toast, a bar (try my chocolate hazelnut chia bars!), or some granola (my coconut almond dark chocolate granola for a double coconutty breakfast).

Gingery Wild Blueberry Coconut Smoothie

Makes 1 smoothie

Ingredients

  • 1 cup frozen wild blueberries

  • 1/2 cup 2% plain yogurt

  • 3/4 cup low fat coconut milk

  • 1/2 teaspoon ground ginger

  • 1-2 teaspoons honey (optional)

Instructions

  1. Place all ingredients in a blender and puree until smooth.
