While I’m not really big on cocktails (wine and hoppy or sour beers are more my thing), I do make some exceptions. Especially for things that are fruity, a little bit sour and not too strong ;) And of course, when I'm entertaining I like to whip up something fancy.

Watermelon Mint Cocktail Recipe Inspiration
This watermelon mint cocktail recipe is kind of a riff on chia fresca, a fruity Mexican drink made by blending thinned fruit juice with chia seeds. I love to add chia to cocktails and juices, because it doesn’t change the taste, but it just makes it look prettier and more watermelon-like. Chia also adds a boost of nutrition from omega 3 fats and fiber.
How to Make This Watermelon Mint Cocktail Recipe
To make this watermelon mint cocktail, get a super sweet and ripe summer watermelon, preferably one from the farmers market, your backyard, or one sold off the side of the road, because those taste SO much better than the ones you’ll find a grocery store, even when it’s in season. As with tomatoes, this is one food where it really makes a difference. If not, here’s an easy trick to finding a good watermelon – look for one with a creamy or pale green spot on the rind. That means it’s ripened before picking.
Because watermelon is…well, juicy, you don’t need to use a juicer and you can just blend it up in a blender to make a juice. Mix it with honey or simple syrup, coconut water and lime juice, then strain it into a glass with ice, chia and muddled mint. Add a splash of vodka or rum, or drink it virgin!
Watermelon Mint Cocktail Recipe
Makes enough for 4-6 cocktails
Ingredients
1/4th of a large watermelon, cut into cubes, seeded
1 – 1 ½ cups coconut water
Juice of 1 lime
1 tablespoon honey
1 tablespoon chia seeds
Fresh mint
Vodka or rum
Instructions
Add watermelon, coconut water, lime juice and honey to a blender. Puree until well combined. Add a little more coconut water if needed to get it moving.
Place a fine mesh sieve over a pitcher. Carefully pour the watermelon puree through the sieve. If you don’t mind a little pulp, skip this step. After straining, stir in the chia seeds.
Add a sprig of mint leaves to the bottom of a tall glass. With a muddler or spoon, smash lightly to release it’s aroma. Add ice, a splash of vodka or rum, and top off with watermelon puree.
