Salmon Four Ways: Fast and Easy Dinner Recipes

Hi all! While I'm off traveling in Japan for two weeks, I've asked some of my favorite dietitian bloggers to guest post. Keep up with my adventures on instagram! Today, sharing a post from my lovely friend Anne, who is a must follow for tasty, fuss-free recipes and inspiration for fitness for fun, not calorie burning.

Hey everyone! I’m Anne Mauney, an intuitive eating Registered Dietitian and a food, fitness, and travel blogger over at fANNEtasticfood.com, and I’m thrilled to have the chance to guest post for her today while she is off enjoying her travels!

I'm a huge fan of salmon -  not just because it's nutritious and delicious, but also because it is so quick and easy to make! I used to be intimidated by cooking salmon at home and would only order it at restaurants, but these recipes have definitely changed my mind. Here are four of my favorite delicious, fast and easy salmon recipes!

Salmon with Lemon Mustard Dill Sauce – This is one of my recent go-to meals for both busy weeknights and dinner parties with friends. It’s absolutely delicious – even my husband loves it, and he’s not a huge salmon fan! The sauce comes together in just a minute, but you could even make it in advance (and marinate the salmon in advance) to make this quick meal even quicker.

Sheet Pan Asian Salmon with Veggies - This is sure to be your new favorite quick and flavorful weeknight meal. Cooking the salmon and veggies on one pan means there's next to no cleanup, and drizzling a ginger soy glaze over everything makes this dinner especially delicious.

Roasted Salmon with Watermelon Salsa - I love the freshness that fruit adds to salmon dishes - and this watermelon salsa is perfect for brightening up an easy weeknight meal. The salsa comes together in no time (tip: chop everything while the salmon is in the oven), and you end up with an impressively delicious and quick meal!

Pesto Baked Salmon with Veggies - This recipe has been a favorite on my blog for a while now – it was one of my first forays into cooking salmon at home, and it’s incredibly easy! Adding the bold, fresh flavor of pesto (even when store-bought!) makes this dish a winner even for those who are on the fence about seafood. :)

I hope you enjoy the recipes – let me know which ones you try and how you like them! And another big thank you to Rachael for having me today. :)

What’s your go-to salmon recipe? I’d love to find some new favorites to add to the rotation!
