Easy Dark Chocolate Peanut Butter and Jelly Cups

Like most kids, when I was growing up, I loved candy. I was (and still am) partial to sour candies, and being a child of the 80s/90s, that meant Airheads, Jawbreakers, Nerds, and Sour Patch Kids. Chocolate candies just didn’t do it for me. Even as a kid I thought Hershey’s chocolate was chalky and ick - I was a 9-year old chocolate snob!

I’m still a chocolate snob today. When i want chocolate candies, with the exception of Twix or Kit Kat Bars that have been in the freezer, I love to get chocolate candies that are a bit fancier, like sea salt and turbinado sugar coated almonds or truffles from my favorite local chocolate shop. Or, I use high quality chocolate chips to make my own candies at home, like these dark chocolate peanut butter and jelly cups. Thick layers of rich and creamy dark chocolate filled with creamy salted peanut butter and a spoonful of sweet and tart jam!

How to Make Dark Chocolate Peanut Butter and Jelly Cups

These dark chocolate peanut butter and jelly cups couldn’t be more simple to make. To make them, melt dark chocolate chips with a bit of coconut oil, which helps the chocolate harden faster, and gives it more of a melt in your mouth quality. Pour a little bit of melted chocolate into cupcake liners n a 12-well muffin tin and top with a spoonful of creamy peanut butter and your favorite flavor of jam. Then pour a little more chocolate over the top to cover. Freeze or refrigerate until hardened, then enjoy! I keep the candies in the fridge, because cold chocolate is the best chocolate.

  • Dark Chocolate - To make these, I used Endangered Species (client) Oat Milk Dark Chocolate Chips, a new product of theirs I'm partnering with ESC on. Since chocolate is the star of this recipe, you definitely want to use chocolate chips that are high quality. My go-to is usually Ghirardelli 60% baking chips, or Guittard is also delicious too!
  • Peanut Butter - Salt brings out the flavor of sweets, so be sure to use a salted peanut butter. My personal favorite brands are Peanut Butter and Co. and Trader Joe's Valencia PB.
  • Jam - Last but not least, you'll want a really tasty jam for this recipe. My personal faves are strawberry and raspberry. Since it's a simple recipe, you'll want to be sure to use a really tasty jam! I like to break out my favorite Sallie's Greatest Jams, a local brand that sells flavors like strawberry basil and blueberry, thyme and lemon.

Dark Chocolate Peanut Butter and Jelly Cup Recipe Adaptions

This peanut butter and jelly cups recipe is a fun treat to play around with! Feel free to use any nut butter you like, or even better, try it with flavored peanut butters. The aforementioned brand Peanut Butter & Co. makes a honey peanut butter that’s to die for! While I made this recipe with dark chocolate, you can also make it with milk chocolate.

Instead of jam, try these with a drizzle of honey!

Dark Chocolate Peanut Butter and Jelly Cups

Makes 12

Ingredients

  • 10 ounces dark chocolate chips

  • 2 teaspoons coconut oil

  • Creamy peanut butter

  • Your favorite flavor of jam

  • Cupcake liners

Instructions

  1. Line a 12-cup muffin tin with cupcake liners.

  2. Heat chocolate chips and coconut oil in a microwave safe bowl for 30 seconds. Stir and continue to microwave in 20 second intervals, stirring between each, until chocolate is melted and smooth.

  3. Using a soup spoon, pour a layer of chocolate at the bottom of each cupcake liner. Top with a rounded teaspoon each of peanut butter and jam. Spoon the remaining chocolate over the top, completely covering the peanut butter and jam.

  4. Refrigerate at least an hour to harden. Store in a lidded container in the refrigerator.
